- 1 (5-6 pound) bone-in prime rib roast
- 2 tablespoons coarse sea salt
- 1 tablespoon freshly ground black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 cup bone marrow (from 2-4 bones)
- 4 tablespoons unsalted butter, softened
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon lemon zest
Instructions
- Preheat the oven to 450°F (232°C).
- Season the prime rib roast with salt, pepper, garlic powder, and onion powder.
- Place the roast in a roasting pan, bone-side down, and roast for 30 minutes.
- Reduce the temperature to 325°F (163°C) and continue roasting for approximately 1.5 to 2 hours, or until the internal temperature reaches your desired doneness.
- While the roast cooks, prepare the whipped bone marrow butter by combining the bone marrow, softened butter, parsley, and lemon zest in a bowl and mixing until smooth.
- Once the roast is done, let it rest for 20-30 minutes before slicing.
- Serve slices of prime rib topped with the whipped bone marrow butter.

- Letting the roast rest helps retain its juices.
