Description

A festive and flavorful bison roast seasoned with juniper sea salt, perfect for your holiday celebration.


Ingredients

  • 1 bison roast (approximately 4-5 pounds)
  • 2 tablespoons juniper sea salt
  • 2 teaspoons black pepper
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup beef broth


Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a small bowl, mix the juniper sea salt, black pepper, minced garlic, olive oil, rosemary, and thyme to create a rub.
  3. Rub the mixture all over the bison roast.
  4. Place the bison roast in a roasting pan and pour the beef broth around it.
  5. Roast the bison in the preheated oven for approximately 2-2.5 hours, or until a meat thermometer reads 135°F (57°C) for medium-rare.
  6. Remove the roast from the oven and let it rest for 15 minutes before slicing.
