- 1 bison roast (approximately 4-5 pounds)
- 2 tablespoons juniper sea salt
- 2 teaspoons black pepper
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 cup beef broth
Instructions
- Preheat your oven to 325°F (163°C).
- In a small bowl, mix the juniper sea salt, black pepper, minced garlic, olive oil, rosemary, and thyme to create a rub.
- Rub the mixture all over the bison roast.
- Place the bison roast in a roasting pan and pour the beef broth around it.
- Roast the bison in the preheated oven for approximately 2-2.5 hours, or until a meat thermometer reads 135°F (57°C) for medium-rare.
- Remove the roast from the oven and let it rest for 15 minutes before slicing.
Notes
- This roast pairs well with root vegetables.
- Allow leftovers to cool completely before refrigerating.
- For added flavor, marinate the roast overnight with the rub.
