Hearty and flavorful Winter Fire Braised Short Ribs that warm you up on cold days.
Ingredients

- 4 pounds beef short ribs
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 2 cups red wine
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 300°F (150°C).
- Heat the oil in a large Dutch oven over medium-high heat.
- Brown the short ribs on all sides, then remove from the pot.
- Add the onion, carrots, celery, and garlic to the pot and sauté until softened.
- Pour in the wine and scrape the bottom of the pot to deglaze.
- Add the beef broth, tomato paste, bay leaves, thyme, salt, and pepper.
- Return the short ribs to the pot and bring to a simmer.
- Cover and transfer to the oven. Braise for 3 hours or until tender.
- Remove from oven and let rest before serving.
Notes
- Pair with mashed potatoes or crusty bread.
- This dish can be made a day ahead and tastes even better the next day.
