Description

Hearty and flavorful Winter Fire Braised Short Ribs that warm you up on cold days.


Ingredients

Scale
  • 4 pounds beef short ribs
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Heat the oil in a large Dutch oven over medium-high heat.
  3. Brown the short ribs on all sides, then remove from the pot.
  4. Add the onion, carrots, celery, and garlic to the pot and sauté until softened.
  5. Pour in the wine and scrape the bottom of the pot to deglaze.
  6. Add the beef broth, tomato paste, bay leaves, thyme, salt, and pepper.
  7. Return the short ribs to the pot and bring to a simmer.
  8. Cover and transfer to the oven. Braise for 3 hours or until tender.
  9. Remove from oven and let rest before serving.

  • Pair with mashed potatoes or crusty bread.
  • This dish can be made a day ahead and tastes even better the next day.
