Instructions
- Preheat the oven to 375°F (190°C).
- Rub the crown roast with olive oil, and season with salt and pepper.
- Spread the herb butter evenly over the roast.
- Place the roast in a roasting pan and cook for about 2 to 2.5 hours, or until the internal temperature reaches 145°F (63°C).
- Let it rest for 15 minutes before carving.

- Herb butter can be made in advance and refrigerated.
