- 1 whole fish (such as branzino or snapper)
- 2 cups rendered animal fat (such as duck or pork)
- 2 tablespoons salt
- 1 teaspoon black pepper
- 1 lemon (sliced)
- 4 sprigs fresh herbs (such as thyme or parsley)
Instructions
- Preheat your oven to 400°F (200°C).
- Clean the fish and pat it dry.
- Season the fish generously with salt and black pepper, both inside and out.
- Stuff the cavity of the fish with lemon slices and fresh herbs.
- In a large baking dish, pour half of the rendered animal fat to create a base.
- Place the fish on top of the fat and cover it completely with the remaining fat.
- Bake the fish in the preheated oven for 25-30 minutes, until the flesh is opaque and flakes easily with a fork.
- Carefully remove the fish from the fat and allow it to rest for a few minutes before serving.
