Description

A deliciously rich recipe that envelops fish in a crispy layer of animal fat for a unique cooking technique.


Ingredients

  • 1 whole fish (such as branzino or snapper)
  • 2 cups rendered animal fat (such as duck or pork)
  • 2 tablespoons salt
  • 1 teaspoon black pepper
  • 1 lemon (sliced)
  • 4 sprigs fresh herbs (such as thyme or parsley)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean the fish and pat it dry.
  3. Season the fish generously with salt and black pepper, both inside and out.
  4. Stuff the cavity of the fish with lemon slices and fresh herbs.
  5. In a large baking dish, pour half of the rendered animal fat to create a base.
  6. Place the fish on top of the fat and cover it completely with the remaining fat.
  7. Bake the fish in the preheated oven for 25-30 minutes, until the flesh is opaque and flakes easily with a fork.
  8. Carefully remove the fish from the fat and allow it to rest for a few minutes before serving.
