Description

Vietnamese Bo Kho is a hearty beef stew flavored with aromatic spices and served with fresh herbs. It’s a comforting dish that showcases the rich flavors of Vietnamese cuisine.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 carrots, cut into chunks
  • 3 cups beef broth
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon ground black pepper
  • 1 tablespoon five-spice powder
  • 1 star anise
  • 1 teaspoon salt
  • 1 bunch fresh cilantro, for garnish
  • 1 bunch green onions, for garnish


Instructions

  1. In a pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger; sauté until fragrant.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the carrots, beef broth, fish sauce, sugar, black pepper, five-spice powder, star anise, and salt.
  4. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours, until the beef is tender.
  5. Serve hot, garnished with fresh cilantro and green onions.
