- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon paprika
- Fresh chives for garnish
- Food coloring (pink or red)
Instructions
- Hard boil the eggs, then cool and peel them.
- Slice the eggs in half lengthwise and remove the yolks.
- In a bowl, combine the yolks, mayonnaise, mustard, vinegar, salt, pepper, and paprika.
- Add a few drops of food coloring to the mixture to achieve a pink color.
- Spoon or pipe the yolk mixture back into the egg whites.
- Garnish with fresh chives on top.
