- 4 turkey thighs
- 2 cups schmaltz (rendered chicken fat)
- 4 sprigs of thyme
- 4 cloves of garlic, crushed
- 1 onion, sliced
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
Instructions
- Preheat your oven to 200°F (93°C).
- In a large oven-safe pot, layer the sliced onion at the bottom.
- Place the turkey thighs on top of the onions.
- Sprinkle with garlic, thyme, salt, and pepper.
- Cover the turkey thighs completely with schmaltz.
- Cover the pot with a lid and place it in the oven.
- Cook for about 4-6 hours, until tender.
- Once done, let it cool, then refrigerate in the fat.
Notes
- For best results, allow the confit to sit in the refrigerator for a couple of days before serving.
- Serve the meat warm or cold, with the schmaltz as a flavorful accompaniment.
