Ingredients

  • 4 turkey thighs
  • 2 cups schmaltz (rendered chicken fat)
  • 4 sprigs of thyme
  • 4 cloves of garlic, crushed
  • 1 onion, sliced
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper


Instructions

  1. Preheat your oven to 200°F (93°C).
  2. In a large oven-safe pot, layer the sliced onion at the bottom.
  3. Place the turkey thighs on top of the onions.
  4. Sprinkle with garlic, thyme, salt, and pepper.
  5. Cover the turkey thighs completely with schmaltz.
  6. Cover the pot with a lid and place it in the oven.
  7. Cook for about 4-6 hours, until tender.
  8. Once done, let it cool, then refrigerate in the fat.

Notes

  • For best results, allow the confit to sit in the refrigerator for a couple of days before serving.
  • Serve the meat warm or cold, with the schmaltz as a flavorful accompaniment.
