- 4 turkey tails
- 4 cups duck fat or chicken fat
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 sprigs fresh thyme
Instructions
- Preheat your oven to 250°F (120°C).
- Rub the turkey tails with salt and pepper.
- Place the seasoned turkey tails in a baking dish and cover with duck or chicken fat.
- Add the thyme on top and cover the dish with foil.
- Bake in the preheated oven for 4 hours until tender.
- Remove from the oven, let it cool slightly, and drain the fat.
- For crispy skin, heat a skillet over medium-high heat and sear the turkey tails until golden brown.
- Serve warm or store in the refrigerator for later use.
