Description

Deliciously rich and crispy turkey tail confit that brings out the best flavors of the mushroom.


Ingredients

  • 4 turkey tails
  • 4 cups duck fat or chicken fat
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 sprigs fresh thyme


Instructions

  1. Preheat your oven to 250°F (120°C).
  2. Rub the turkey tails with salt and pepper.
  3. Place the seasoned turkey tails in a baking dish and cover with duck or chicken fat.
  4. Add the thyme on top and cover the dish with foil.
  5. Bake in the preheated oven for 4 hours until tender.
  6. Remove from the oven, let it cool slightly, and drain the fat.
  7. For crispy skin, heat a skillet over medium-high heat and sear the turkey tails until golden brown.
  8. Serve warm or store in the refrigerator for later use.
