Ingredients

- 2 pounds trotters
- 1 large onion, halved
- 2 carrots, cut into chunks
- 2 celery stalks, cut into chunks
- 1 garlic head, halved
- 1 teaspoon black peppercorns
- 2 bay leaves
- 8 cups water
Instructions
- Place the trotters in a large pot and cover with water.
- Add the onion, carrots, celery, garlic, peppercorns, and bay leaves.
- Bring to a boil over high heat, then reduce to a simmer.
- Skim off any foam that rises to the surface.
- Simmer for 4-6 hours until the trotters are tender.
- Strain the broth and discard the solids.
- Allow the broth to cool before storing.

- Great as a base for soups and sauces.
- Store in the refrigerator for up to a week or freeze for longer storage.
