Description

A rich and hearty broth perfect for making casoulet or other French dishes.


Ingredients

Scale
  • 2 pounds trotters
  • 1 large onion, halved
  • 2 carrots, cut into chunks
  • 2 celery stalks, cut into chunks
  • 1 garlic head, halved
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • 8 cups water


Instructions

  1. Place the trotters in a large pot and cover with water.
  2. Add the onion, carrots, celery, garlic, peppercorns, and bay leaves.
  3. Bring to a boil over high heat, then reduce to a simmer.
  4. Skim off any foam that rises to the surface.
  5. Simmer for 4-6 hours until the trotters are tender.
  6. Strain the broth and discard the solids.
  7. Allow the broth to cool before storing.
