- 1 pound chorizo sausage
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups shredded cheese (cheddar or a blend)
- 1 cup cream cheese
- 1 can diced tomatoes with green chilies
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
Instructions
- Preheat your Traeger grill to 225°F.
- In a skillet, heat olive oil over medium heat and add the chorizo. Cook until browned.
- Add the onion and garlic to the skillet and sauté until translucent.
- In a large mixing bowl, combine the cheeses, diced tomatoes, and spices.
- Add the cooked chorizo mixture to the cheese mixture and stir well.
- Transfer the mixture to a cast iron skillet and place it on the grill.
- Smoke for about 30-40 minutes, stirring occasionally, until the cheese is melted and bubbly.
- Serve warm with tortilla chips.
Notes
- For extra flavor, add jalapeños based on your heat preference.
- Make sure to keep an eye on the queso as it cooks to prevent burning.
