Description

A deliciously smoky queso dip made with chorizo, perfect for parties and game days.


Ingredients

  • 1 pound chorizo sausage
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 cup cream cheese
  • 1 can diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper


Instructions

  1. Preheat your Traeger grill to 225°F.
  2. In a skillet, heat olive oil over medium heat and add the chorizo. Cook until browned.
  3. Add the onion and garlic to the skillet and sauté until translucent.
  4. In a large mixing bowl, combine the cheeses, diced tomatoes, and spices.
  5. Add the cooked chorizo mixture to the cheese mixture and stir well.
  6. Transfer the mixture to a cast iron skillet and place it on the grill.
  7. Smoke for about 30-40 minutes, stirring occasionally, until the cheese is melted and bubbly.
  8. Serve warm with tortilla chips.

Notes

  • For extra flavor, add jalapeños based on your heat preference.
