Ingredients

- 1 leg of goat (about 5-7 pounds)
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 cup chicken broth
- 1 cup red wine
- 1 onion, quartered
- 2 carrots, cut into chunks
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, mix olive oil, garlic, salt, pepper, paprika, cumin, and oregano. Rub this mixture all over the goat leg.
- Place the goat leg in a roasting pan and surround it with onion and carrots.
- Pour the chicken broth and red wine into the pan.
- Cover the pan with aluminum foil and place it in the oven.
- Cook for 7 hours, basting occasionally, until the meat is tender and pulls away from the bone.
- Remove from the oven, let it rest for 20 minutes before carving and serving.
Notes
- For added flavor, soak the goat leg in a marinade overnight before cooking.
- Serve with crusty bread to soak up the delicious juices.
