Description

A tender and flavorful slow-cooked goat leg that melts in your mouth, perfect for special occasions.


Ingredients

Scale
  • 1 leg of goat (about 5-7 pounds)
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 cup chicken broth
  • 1 cup red wine
  • 1 onion, quartered
  • 2 carrots, cut into chunks


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, mix olive oil, garlic, salt, pepper, paprika, cumin, and oregano. Rub this mixture all over the goat leg.
  3. Place the goat leg in a roasting pan and surround it with onion and carrots.
  4. Pour the chicken broth and red wine into the pan.
  5. Cover the pan with aluminum foil and place it in the oven.
  6. Cook for 7 hours, basting occasionally, until the meat is tender and pulls away from the bone.
  7. Remove from the oven, let it rest for 20 minutes before carving and serving.

Notes

  • For added flavor, soak the goat leg in a marinade overnight before cooking.
  • Serve with crusty bread to soak up the delicious juices.
