Ingredients

- 1 pound shrimp, peeled and deveined
- 1 pound scallops
- 1 pound white fish, such as cod or haddock
- 4 cups seafood stock
- 2 cups heavy cream
- 1 cup potatoes, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 teaspoon thyme
- 1 teaspoon dill
- Salt and pepper to taste
Instructions
- In a large pot, melt butter over medium heat.
- Add onions, carrots, and celery. Sauté until softened.
- Stir in garlic and cook for an additional minute.
- Add the seafood stock and bring to a simmer.
- Stir in the potatoes and cook until tender.
- Add the seafood (shrimp, scallops, fish) and cook until just opaque.
- Reduce heat and stir in heavy cream, thyme, and dill.
- Season with salt and pepper to taste.
- Serve hot with crusty bread.

- Feel free to add other seafood like clams or mussels.
- Adjust the consistency with more or less cream.
