Description

A rich and creamy seafood chowder that is packed with flavor and perfect for chilly days.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 1 pound white fish, such as cod or haddock
  • 4 cups seafood stock
  • 2 cups heavy cream
  • 1 cup potatoes, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • 1 teaspoon dill
  • Salt and pepper to taste


Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add onions, carrots, and celery. Sauté until softened.
  3. Stir in garlic and cook for an additional minute.
  4. Add the seafood stock and bring to a simmer.
  5. Stir in the potatoes and cook until tender.
  6. Add the seafood (shrimp, scallops, fish) and cook until just opaque.
  7. Reduce heat and stir in heavy cream, thyme, and dill.
  8. Season with salt and pepper to taste.
  9. Serve hot with crusty bread.

  • Feel free to add other seafood like clams or mussels.
