Description

Delicious and healthy Thai-inspired chicken cabbage rolls perfect for a keto diet.


Ingredients

Scale
  • 1 pound ground chicken
  • 1 cup shredded carrots
  • 1 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce or coconut aminos
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 8 large cabbage leaves


Instructions

  1. In a large bowl, combine ground chicken, carrots, green onions, garlic, ginger, soy sauce, lime juice, and sesame oil.
  2. Blanch cabbage leaves in boiling water for 2-3 minutes until pliable.
  3. Place a generous amount of the filling in each cabbage leaf and roll tightly.
  4. Place the rolls seam-side down in a baking dish.
  5. Cover with foil and bake at 350°F for 30 minutes.
  6. Serve with extra lime juice and sesame oil drizzled on top.

Notes

  • For spice, add red pepper flakes to the filling.
  • Best served with a side of Thai peanut sauce.
