Delicious and healthy Thai-inspired chicken cabbage rolls perfect for a keto diet.
Ingredients

- 1 pound ground chicken
- 1 cup shredded carrots
- 1 cup chopped green onions
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce or coconut aminos
- 1 tablespoon lime juice
- 1 tablespoon sesame oil
- 8 large cabbage leaves
Instructions
- In a large bowl, combine ground chicken, carrots, green onions, garlic, ginger, soy sauce, lime juice, and sesame oil.
- Blanch cabbage leaves in boiling water for 2-3 minutes until pliable.
- Place a generous amount of the filling in each cabbage leaf and roll tightly.
- Place the rolls seam-side down in a baking dish.
- Cover with foil and bake at 350°F for 30 minutes.
- Serve with extra lime juice and sesame oil drizzled on top.
Notes
- For spice, add red pepper flakes to the filling.
- Best served with a side of Thai peanut sauce.
