Instructions
- Peel the plantains and slice them diagonally into 1-inch pieces.
- Heat tallow in a large skillet over medium-high heat.
- Add plantain pieces and fry until golden brown, about 3-4 minutes per side.
- Remove plantains and drain on paper towels.
- Season flank steak with garlic, salt, and pepper, then cook in the same skillet to desired doneness.
- Let the steak rest before slicing it against the grain.
- Serve the steak with the fried plantains and a drizzle of lime juice.
- Garnish with fresh herbs.
