Description

A rich and flavorful dish inspired by traditional haggis, using pork stomach as the casing filled with a hearty mixture.


Ingredients

  • 1 pork stomach
  • 2 cups minced pork
  • 1 cup suet
  • 1 cup oats
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/2 teaspoon thyme
  • 1/2 cup beef or chicken broth


Instructions

  1. Clean the pork stomach well and soak it in salted water overnight.
  2. In a mixing bowl, combine minced pork, suet, oats, onion, garlic, and spices.
  3. Add broth to the mixture and stir until fully incorporated.
  4. Stuff the pork stomach with the mixture, leaving space to expand.
  5. Sew the stomach closed with kitchen twine.
  6. Place the stuffed stomach in a large pot and cover with broth.
  7. Simmer for approximately 2-3 hours until fully cooked.
  8. Let it rest for 15 minutes before slicing and serving.
