- 1 pork stomach
- 2 cups minced pork
- 1 cup suet
- 1 cup oats
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon ground coriander
- 1 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 teaspoon thyme
- 1/2 cup beef or chicken broth
Instructions
- Clean the pork stomach well and soak it in salted water overnight.
- In a mixing bowl, combine minced pork, suet, oats, onion, garlic, and spices.
- Add broth to the mixture and stir until fully incorporated.
- Stuff the pork stomach with the mixture, leaving space to expand.
- Sew the stomach closed with kitchen twine.
- Place the stuffed stomach in a large pot and cover with broth.
- Simmer for approximately 2-3 hours until fully cooked.
- Let it rest for 15 minutes before slicing and serving.

- Serve with mashed potatoes or neeps for a traditional experience.
