Description
A rich and flavorful jam made from slowly braised oxtail, infused with star anise for a unique twist.
Ingredients

- 2 pounds oxtail
- 4 star anise
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 carrot, diced
- 3 cups beef broth
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon black peppercorns
- 1/4 teaspoon ground ginger
- 2 tablespoons vegetable oil
Instructions
- Heat vegetable oil in a large pot over medium-high heat.
- Brown the oxtail on all sides, then remove and set aside.
- Add onion, garlic, and carrot; sauté until softened.
- Return oxtail to the pot; add star anise, broth, soy sauce, brown sugar, peppercorns, and ginger.
- Brought to a simmer, cover, and reduce heat to low.
- Braise for 3-4 hours until oxtail is tender.
- Remove oxtail and shred meat from bones, returning meat to the pot.
- Reduce sauce until thickened, then allow to cool.
- Store in jars in the refrigerator.
Notes
- Serve over rice or as a spread on toast.
- Can be stored for up to one week in the fridge.
