Description

A rich and flavorful jam made from slowly braised oxtail, infused with star anise for a unique twist.


Ingredients

Scale
  • 2 pounds oxtail
  • 4 star anise
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 carrot, diced
  • 3 cups beef broth
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon black peppercorns
  • 1/4 teaspoon ground ginger
  • 2 tablespoons vegetable oil


Instructions

  1. Heat vegetable oil in a large pot over medium-high heat.
  2. Brown the oxtail on all sides, then remove and set aside.
  3. Add onion, garlic, and carrot; sauté until softened.
  4. Return oxtail to the pot; add star anise, broth, soy sauce, brown sugar, peppercorns, and ginger.
  5. Brought to a simmer, cover, and reduce heat to low.
  6. Braise for 3-4 hours until oxtail is tender.
  7. Remove oxtail and shred meat from bones, returning meat to the pot.
  8. Reduce sauce until thickened, then allow to cool.
  9. Store in jars in the refrigerator.

  • Serve over rice or as a spread on toast.
  • Can be stored for up to one week in the fridge.
