- 4 chicken thighs
- 200g chorizo, sliced
- 1 cup long-grain rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups chicken broth
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 1 handful of parsley, chopped
Instructions
- In a large pan, brown the chicken thighs over medium heat.
- Add the chorizo and cook until crispy.
- Stir in the onion, garlic, and bell pepper, cooking until softened.
- Add the rice, broth, paprika, cayenne, salt, and pepper.
- Cover and simmer until the rice is cooked and the liquid absorbed.
- Garnish with parsley before serving.
