Description

A delicious one-pan meal featuring spicy chicken, savory chorizo, and tasty rice.


Ingredients

  • 4 chicken thighs
  • 200g chorizo, sliced
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 1 handful of parsley, chopped


Instructions

  1. In a large pan, brown the chicken thighs over medium heat.
  2. Add the chorizo and cook until crispy.
  3. Stir in the onion, garlic, and bell pepper, cooking until softened.
  4. Add the rice, broth, paprika, cayenne, salt, and pepper.
  5. Cover and simmer until the rice is cooked and the liquid absorbed.
  6. Garnish with parsley before serving.
