Description

A flavorful dish combining collard greens with spicy seasonings, perfect for a hearty side.


Ingredients

  • 1 bunch collard greens
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 4 cups vegetable broth
  • 2 bay leaves


Instructions

  1. Rinse the collard greens and chop them into bite-sized pieces.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and garlic; sauté until soft.
  4. Stir in the smoked paprika, cayenne pepper, and thyme.
  5. Add the collard greens and vegetable broth. Bring to a simmer.
  6. Season with bay leaves and simmer for about 30 minutes, or until the greens are tender.
  7. Remove bay leaves and serve warm.

  • For extra spice, add more cayenne pepper.
