- 1 bunch collard greens
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon thyme
- 4 cups vegetable broth
- 2 bay leaves
Instructions
- Rinse the collard greens and chop them into bite-sized pieces.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic; sauté until soft.
- Stir in the smoked paprika, cayenne pepper, and thyme.
- Add the collard greens and vegetable broth. Bring to a simmer.
- Season with bay leaves and simmer for about 30 minutes, or until the greens are tender.
- Remove bay leaves and serve warm.
Notes
- For extra spice, add more cayenne pepper.
- Serve as a side dish or over rice for a main meal.
