A flavorful twist on traditional collard greens, cooking them with a spicy gumbo flair.
Ingredients

- 2 pounds collard greens, chopped
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 1 teaspoon thyme
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tablespoon lemon juice
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and sauté until soft.
- Stir in minced garlic, cayenne pepper, smoked paprika, and thyme; cook for 1 minute.
- Add vegetable broth and diced tomatoes; bring to a boil.
- Add collard greens and cook until tender, about 30 minutes.
- Stir in lemon juice before serving.
Notes
- For extra heat, add more cayenne pepper.
- Serve with cornbread for a complete meal.
