Description

A flavorful twist on traditional collard greens, cooking them with a spicy gumbo flair.


Ingredients

  • 2 pounds collard greens, chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon thyme
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tablespoon lemon juice


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion and sauté until soft.
  3. Stir in minced garlic, cayenne pepper, smoked paprika, and thyme; cook for 1 minute.
  4. Add vegetable broth and diced tomatoes; bring to a boil.
  5. Add collard greens and cook until tender, about 30 minutes.
  6. Stir in lemon juice before serving.

Notes

  • For extra heat, add more cayenne pepper.
  • Serve with cornbread for a complete meal.
