Ingredients

  • 1 Cornish hen
  • 1 pound pork belly
  • 2 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon brown sugar
  • 1/2 cup BBQ sauce


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spatchcock the Cornish hen by removing the backbone and flattening it.
  3. Rub the hen with olive oil and season with salt, pepper, paprika, garlic powder, onion powder, and brown sugar.
  4. In a separate dish, cut the pork belly into cubes, season similarly, and cook them until crispy.
  5. Place the seasoned hen on a baking sheet and roast for 30-40 minutes until fully cooked.
  6. Serve the Cornish hen with the pork belly burnt ends drizzled with BBQ sauce.
