Description

This delicious recipe features perfectly cooked scallops sous vide, complemented by a rich brown butter sauce.


Ingredients

Scale
  • 1 pound sea scallops
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 lemon (for serving)


Instructions

  1. Preheat the sous vide water bath to 125°F (51°C).
  2. Season the scallops with salt and pepper.
  3. Place the scallops in a vacuum-sealed bag with olive oil and seal.
  4. Sous vide the scallops for 45 minutes.
  5. In a pan, melt the butter over medium heat until it turns golden brown.
  6. Carefully remove the scallops from the bag and sear them in the brown butter for 1-2 minutes per side.
  7. Serve immediately with a squeeze of lemon and parsley.

Notes

  • Be careful not to overcook the scallops during the sear.
  • Adjust the amount of butter based on preference for richness.
