- 1 pound sea scallops
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
- 1 lemon (for serving)
Instructions
- Preheat the sous vide water bath to 125°F (51°C).
- Season the scallops with salt and pepper.
- Place the scallops in a vacuum-sealed bag with olive oil and seal.
- Sous vide the scallops for 45 minutes.
- In a pan, melt the butter over medium heat until it turns golden brown.
- Carefully remove the scallops from the bag and sear them in the brown butter for 1-2 minutes per side.
- Serve immediately with a squeeze of lemon and parsley.
Notes
- Be careful not to overcook the scallops during the sear.
- Adjust the amount of butter based on preference for richness.
