Description

A delicious sous vide preparation of lamb heart, seasoned with smoked salt for enhanced flavor.


Ingredients

  • 1 lamb heart
  • 2 teaspoons smoked salt
  • 1 tablespoon olive oil
  • 1 sprig of rosemary


Instructions

  1. Preheat the sous vide water bath to 140°F (60°C).
  2. Clean the lamb heart and remove any excess fat.
  3. Season the heart with smoked salt and olive oil.
  4. Place the heart in a vacuum-sealed bag along with the rosemary.
  5. Sous vide the heart for 3 hours.
  6. Once cooked, remove from the bag and sear on a hot grill or pan for 1-2 minutes per side.
  7. Let rest for a few minutes before slicing and serving.
