Ingredients

- 2 teaspoons smoked salt
- 1 tablespoon olive oil
- 1 sprig of rosemary
Instructions
- Preheat the sous vide water bath to 140°F (60°C).
- Clean the lamb heart and remove any excess fat.
- Season the heart with smoked salt and olive oil.
- Place the heart in a vacuum-sealed bag along with the rosemary.
- Sous vide the heart for 3 hours.
- Once cooked, remove from the bag and sear on a hot grill or pan for 1-2 minutes per side.
- Let rest for a few minutes before slicing and serving.
