- 2 pounds beef tongue
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon smoked paprika
- 1 cup vegetable oil
Instructions
- Season the beef tongue with salt, black pepper, and smoked paprika.
- Vacuum seal the tongue and sous vide at 180°F (82°C) for 10-12 hours.
- Remove the tongue from the sous vide bag and let it cool slightly.
- Peel the skin off the tongue and cut it into fry-sized pieces.
- Heat vegetable oil in a deep fryer to 350°F (175°C).
- Fry the tongue pieces until golden brown and crispy.
- Drain on paper towels and serve hot.
Notes
- For added flavor, marinate the tongue overnight before sous vide cooking.
- Adjust spices according to your taste preference.
- These fries pair well with a dipping sauce like aioli or ketchup.
