Description

These sous vide beef tongue fries are tender, flavorful, and a unique twist on a classic snack.


Ingredients

  • 2 pounds beef tongue
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon smoked paprika
  • 1 cup vegetable oil


Instructions

  1. Season the beef tongue with salt, black pepper, and smoked paprika.
  2. Vacuum seal the tongue and sous vide at 180°F (82°C) for 10-12 hours.
  3. Remove the tongue from the sous vide bag and let it cool slightly.
  4. Peel the skin off the tongue and cut it into fry-sized pieces.
  5. Heat vegetable oil in a deep fryer to 350°F (175°C).
  6. Fry the tongue pieces until golden brown and crispy.
  7. Drain on paper towels and serve hot.

Notes

  • For added flavor, marinate the tongue overnight before sous vide cooking.
