Ingredients

  • 2 kilograms pork belly
  • 1 cup sea salt
  • 1 tablespoon black peppercorns
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 5 cloves garlic, crushed
  • 2 bay leaves
  • 1 liter water
  • 2 tablespoons vinegar
  • 1 tablespoon oil


Instructions

  1. Clean the pork belly and score the skin.
  2. Boil water with salt, garlic, and spices, then let it cool.
  3. Marinate the pork belly in the saltwater mixture for at least 12 hours.
  4. Preheat the oven to 220°C (428°F).
  5. Place the pork belly on a rack and roast for 2-3 hours until the skin is crispy.
  6. Brush with vinegar and oil during roasting for extra crispiness.
  7. Let it rest for 15 minutes before slicing.

Notes

  • For an extra crispy skin, dry the pork belly completely before roasting.
