- 2 kilograms pork belly
- 1 cup sea salt
- 1 tablespoon black peppercorns
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 5 cloves garlic, crushed
- 2 bay leaves
- 1 liter water
- 2 tablespoons vinegar
- 1 tablespoon oil
Instructions
- Clean the pork belly and score the skin.
- Boil water with salt, garlic, and spices, then let it cool.
- Marinate the pork belly in the saltwater mixture for at least 12 hours.
- Preheat the oven to 220°C (428°F).
- Place the pork belly on a rack and roast for 2-3 hours until the skin is crispy.
- Brush with vinegar and oil during roasting for extra crispiness.
- Let it rest for 15 minutes before slicing.
Notes
- For an extra crispy skin, dry the pork belly completely before roasting.
- Adjust the seasoning to taste.
