Instructions
- Preheat your smoker to 225°F (107°C).
- In a bowl, mix together olive oil, salt, pepper, garlic powder, onion powder, smoked paprika, thyme, and lemon juice.
- Rub the mixture all over the chicken, ensuring it’s well-coated.
- Place the chicken in the smoker and cook for about 4 to 5 hours, or until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the smoker and let it rest for 15 minutes before carving.
