- 4 turkey thighs
- 2 tablespoons olive oil
- 2 teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Preheat the smoker to 225°F.
- In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and thyme to create a rub.
- Rub the mixture all over the turkey thighs.
- Place the turkey thighs in the smoker and smoke for about 4-5 hours, or until the internal temperature reaches 165°F.
- Increase the smoker temperature to 375°F for the last 30 minutes to crisp up the skin.
- Remove the turkey thighs from the smoker and let rest for 10 minutes before serving.
Notes
- For extra flavor, brine the turkey thighs overnight.
- You can use a mix of your favorite spices to customize the rub.
