- 1 smoked tongue
- 4 cups beef broth
- 2 carrots, chopped
- 1 onion, diced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon black pepper
- 2 sprigs thyme
- 1 bay leaf
- Salt to taste
Instructions
- In a large pot, combine the smoked tongue and beef broth.
- Add carrots, onion, celery, garlic, and seasonings.
- Bring to a boil, then reduce heat and simmer for about 2 hours.
- Remove the tongue and let it cool slightly before slicing.
- Return sliced tongue to the soup and serve warm.

- Allow the tongue to cool before slicing for easier handling.
- This soup can be frozen; just thaw and reheat before serving.
