Ingredients

- 2 pounds smoked beef ribs
- 8 cups water
- 2 carrots, chopped
- 1 onion, quartered
- 3 cloves garlic, smashed
- 2 bay leaves
- 1 teaspoon black peppercorns
Instructions
- In a large pot, combine the smoked ribs, water, carrots, onion, garlic, bay leaves, and peppercorns.
- Bring to a boil, then reduce heat and simmer for 4-6 hours until the broth is rich and flavorful.
- Strain the broth through a fine-mesh sieve to remove solids.
- Skim off any fat from the surface and serve hot.
Notes
- For a clearer consommé, allow the broth to cool and refrigerate overnight to solidify the fat for easier removal.
- You can garnish with fresh herbs or sliced green onions before serving.
