Description

A rich and flavorful consommé made from smoked ribs.


Ingredients

  • 2 pounds smoked beef ribs
  • 8 cups water
  • 2 carrots, chopped
  • 1 onion, quartered
  • 3 cloves garlic, smashed
  • 2 bay leaves
  • 1 teaspoon black peppercorns


Instructions

  1. In a large pot, combine the smoked ribs, water, carrots, onion, garlic, bay leaves, and peppercorns.
  2. Bring to a boil, then reduce heat and simmer for 4-6 hours until the broth is rich and flavorful.
  3. Strain the broth through a fine-mesh sieve to remove solids.
  4. Skim off any fat from the surface and serve hot.

Notes

  • For a clearer consommé, allow the broth to cool and refrigerate overnight to solidify the fat for easier removal.
  • You can garnish with fresh herbs or sliced green onions before serving.
