- 1 picnic shoulder
- 2 tablespoons salt
- 1 tablespoon black pepper
- 2 tablespoons paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon brown sugar
- 1 tablespoon mustard powder
Instructions
- Prepare the picnic shoulder by trimming excess fat.
- Mix the spices together in a small bowl.
- Rub the spice mixture all over the picnic shoulder.
- Let it sit at room temperature for 1 hour.
- Prepare the smoker according to the manufacturer’s instructions.
- Smoke the shoulder at 225°F for about 6-8 hours, or until the internal temperature reaches 195°F.
- Remove from the smoker and let rest for 30 minutes before slicing.
Notes
- For extra flavor, marinate the shoulder overnight.
- Serve with coleslaw and pickles for a classic BBQ experience.
