Description

A rich and flavorful broth made with smoked duck, perfect for soups and stews.


Ingredients

Scale
  • 1 whole smoked duck
  • 8 cups water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • 1 teaspoon salt, to taste


Instructions

  1. Place the smoked duck in a large pot and cover with water.
  2. Add the carrots, celery, onion, garlic, peppercorns, bay leaves, and salt.
  3. Bring to a boil over medium heat, then reduce to a simmer.
  4. Let simmer for at least 2 hours, skimming any scum that forms on the surface.
  5. Remove the duck and let cool. Strain the broth through a fine-mesh sieve and discard the solids.
  6. Shred the meat from the duck and return it to the broth, or store separately.

Notes

  • Store any leftover broth in the refrigerator for up to 3 days.
  • This broth can be frozen for future use.
