Description
A rich and flavorful broth made with smoked duck, perfect for soups and stews.
Ingredients

- 1 whole smoked duck
- 8 cups water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, quartered
- 4 cloves garlic, smashed
- 1 teaspoon black peppercorns
- 2 bay leaves
- 1 teaspoon salt, to taste
Instructions
- Place the smoked duck in a large pot and cover with water.
- Add the carrots, celery, onion, garlic, peppercorns, bay leaves, and salt.
- Bring to a boil over medium heat, then reduce to a simmer.
- Let simmer for at least 2 hours, skimming any scum that forms on the surface.
- Remove the duck and let cool. Strain the broth through a fine-mesh sieve and discard the solids.
- Shred the meat from the duck and return it to the broth, or store separately.
Notes
- Store any leftover broth in the refrigerator for up to 3 days.
- This broth can be frozen for future use.
