Description

Deliciously smoked Cornish hens seasoned to perfection.


Ingredients

Scale
  • 2 Cornish hens
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon (halved)
  • Fresh herbs (thyme, rosemary)


Instructions

  1. Preheat your smoker to 225°F.
  2. Rub each Cornish hen with olive oil.
  3. Mix the garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture all over the hens.
  4. Stuff the cavity of each hen with lemon halves and fresh herbs.
  5. Place the hens in the smoker, breast side up.
  6. Smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F.
  7. Remove hens from the smoker and let rest for 10 minutes before serving.

Notes

  • For added flavor, brine the hens a day before smoking.
  • Experiment with different wood chips for smoking.
