Deliciously smoked Cornish hens seasoned to perfection.
Ingredients

- 2 Cornish hens
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 lemon (halved)
- Fresh herbs (thyme, rosemary)
Instructions
- Preheat your smoker to 225°F.
- Rub each Cornish hen with olive oil.
- Mix the garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this mixture all over the hens.
- Stuff the cavity of each hen with lemon halves and fresh herbs.
- Place the hens in the smoker, breast side up.
- Smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F.
- Remove hens from the smoker and let rest for 10 minutes before serving.
Notes
- For added flavor, brine the hens a day before smoking.
- Experiment with different wood chips for smoking.
