Description

This smoked brisket with tallow glaze is a succulent and flavorful dish that’s perfect for gatherings.


Ingredients

  • 1 brisket (5-7 lbs)
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 cup beef tallow
  • 1/2 cup apple cider vinegar
  • 1 tablespoon Worcestershire sauce


Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Trim the brisket, leaving about 1/4 inch of fat cap.
  3. Mix the salt, pepper, garlic powder, and onion powder in a bowl.
  4. Rub the spice mixture all over the brisket.
  5. Place the brisket in the smoker and cook until it reaches an internal temperature of 165°F (74°C).
  6. Melt the beef tallow and mix it with apple cider vinegar and Worcestershire sauce.
  7. Once the brisket reaches 165°F, start basting it with the tallow mixture every hour.
  8. Continue smoking until the brisket reaches an internal temperature of 203°F (95°C).
  9. Remove from the smoker and let it rest for at least an hour before slicing.

  • For best results, use a meat thermometer to check the internal temperature.
  • Let the brisket rest before slicing to retain moisture.
