- 1 brisket (5-7 lbs)
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 cup beef tallow
- 1/2 cup apple cider vinegar
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat your smoker to 225°F (107°C).
- Trim the brisket, leaving about 1/4 inch of fat cap.
- Mix the salt, pepper, garlic powder, and onion powder in a bowl.
- Rub the spice mixture all over the brisket.
- Place the brisket in the smoker and cook until it reaches an internal temperature of 165°F (74°C).
- Melt the beef tallow and mix it with apple cider vinegar and Worcestershire sauce.
- Once the brisket reaches 165°F, start basting it with the tallow mixture every hour.
- Continue smoking until the brisket reaches an internal temperature of 203°F (95°C).
- Remove from the smoker and let it rest for at least an hour before slicing.

- For best results, use a meat thermometer to check the internal temperature.
- Let the brisket rest before slicing to retain moisture.
