Description

A rich and smoky bisque made with tender smoked brisket, perfect for a comforting meal.


Ingredients

  • 2 cups smoked brisket, chopped
  • 4 cups beef stock
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1/2 cup flour
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste


Instructions

  1. In a large pot, sauté onions, carrots, and celery until soft.
  2. Add garlic and cook until fragrant.
  3. Stir in flour and cook for another minute.
  4. Gradually add beef stock, whisking to prevent lumps.
  5. Add smoked brisket, Worcestershire sauce, smoked paprika, and cayenne pepper.
  6. Simmer for 30 minutes.
  7. Stir in heavy cream and season with salt and pepper.
  8. Blend with an immersion blender for a smooth texture if desired.
