Ingredients

- 3 pounds bison bones
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 onion, quartered
- 4 cloves garlic, crushed
- 2 tablespoons apple cider vinegar
- 10 cups water
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat your smoker according to the manufacturer’s instructions.
- Smoke the bison bones for about 2 hours until they are deeply browned.
- In a large pot, combine the smoked bones, carrots, celery, onion, garlic, vinegar, water, salt, and pepper.
- Bring to a boil, then reduce heat to a simmer.
- Simmer for at least 12 hours; the longer you simmer, the richer the broth will be.
- Strain the broth through a fine mesh sieve, discarding the solids.
- Let the broth cool, then refrigerate or freeze for future use.
