Description

A rich and flavorful broth made from smoked bison bones, perfect for soups and stews.


Ingredients

Scale
  • 3 pounds bison bones
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, quartered
  • 4 cloves garlic, crushed
  • 2 tablespoons apple cider vinegar
  • 10 cups water
  • 1 teaspoon salt
  • 1 teaspoon black pepper


Instructions

  1. Preheat your smoker according to the manufacturer’s instructions.
  2. Smoke the bison bones for about 2 hours until they are deeply browned.
  3. In a large pot, combine the smoked bones, carrots, celery, onion, garlic, vinegar, water, salt, and pepper.
  4. Bring to a boil, then reduce heat to a simmer.
  5. Simmer for at least 12 hours; the longer you simmer, the richer the broth will be.
  6. Strain the broth through a fine mesh sieve, discarding the solids.
  7. Let the broth cool, then refrigerate or freeze for future use.
