Ingredients

- 3 pounds beef cheek
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/2 cup BBQ sauce
- 1/2 cup apple cider vinegar
Instructions
- Preheat smoker to 225°F.
- Trim excess fat from beef cheeks.
- Season with salt, pepper, paprika, garlic powder, and onion powder.
- Place beef cheeks in the smoker and smoke for 6 hours.
- Wrap in foil with BBQ sauce and apple cider vinegar, then smoke for an additional 2 hours.
- Unwrap and return to smoker for another hour for a nice crust.
- Rest for 30 minutes before cutting into cubes and serving.
