Tender and flavorful wild boar ribs slow-smoked to perfection, offering a unique twist on traditional BBQ.

- 2 racks wild boar ribs
- 1 tablespoon olive oil
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon brown sugar
- 1 teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon cayenne pepper
- ½ cup apple cider vinegar
Instructions
- Prepare the ribs by trimming excess fat and removing the membrane.
- In a bowl, mix olive oil, smoked paprika, garlic powder, onion powder, brown sugar, black pepper, salt, and cayenne pepper to create a rub.
- Rub the mixture generously over the ribs and let them marinate for at least 2 hours, preferably overnight.
- Preheat your smoker to 225°F (107°C).
- Place the ribs in the smoker and smoke for about 4-5 hours, or until they reach an internal temperature of 190°F (88°C).
- During the last hour, spray the ribs with apple cider vinegar every 30 minutes.
- Remove the ribs from the smoker and let them rest for 10 minutes before slicing and serving.
Notes
- For a spicier kick, add more cayenne pepper to the rub.
- These can also be cooked in a conventional oven at low temperature if a smoker is not available.
