Ingredients

Scale
  • 2 racks wild boar ribs
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 cup apple juice
  • 1 tablespoon barbecue sauce (optional)

Instructions

  1. Preheat the smoker to 225°F (107°C).
  2. Mix the dry spices together to create a rub.
  3. Apply the rub generously to both sides of the ribs.
  4. Place the ribs in the smoker, bone side down, and smoke for 4 to 5 hours.
  5. Every hour, spritz the ribs with apple juice to keep them moist.

  7. Remove from the smoker and let rest for 10 minutes before serving.
