- 3 pounds wild boar ribs
- 2 tablespoons olive oil
- 1 tablespoon sea salt
- 1 tablespoon black pepper
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon brown sugar
- 1 teaspoon cayenne pepper
- 1 cup apple cider vinegar
Instructions
- Preheat your smoker to 225°F (107°C).
- In a bowl, mix olive oil, sea salt, black pepper, smoked paprika, garlic powder, onion powder, brown sugar, and cayenne pepper to create a dry rub.
- Apply the dry rub generously on the wild boar ribs.
- Place the ribs in the smoker and smoke for about 5-6 hours, or until they are tender and pull apart easily.
- During the last hour, baste the ribs with apple cider vinegar to keep them moist and enhance flavor.
- Once done, remove ribs from smoker and let them rest for 15 minutes before slicing.
Notes
- For extra flavor, you can marinate the ribs overnight with the dry rub.
- Experiment with different wood chips for smoking to find your preferred flavor.
