Ingredients

  • 3 pounds wild boar ribs
  • 2 tablespoons olive oil
  • 1 tablespoon sea salt
  • 1 tablespoon black pepper
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon cayenne pepper
  • 1 cup apple cider vinegar


Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. In a bowl, mix olive oil, sea salt, black pepper, smoked paprika, garlic powder, onion powder, brown sugar, and cayenne pepper to create a dry rub.
  3. Apply the dry rub generously on the wild boar ribs.
  4. Place the ribs in the smoker and smoke for about 5-6 hours, or until they are tender and pull apart easily.
  5. During the last hour, baste the ribs with apple cider vinegar to keep them moist and enhance flavor.
  6. Once done, remove ribs from smoker and let them rest for 15 minutes before slicing.

Notes

  • For extra flavor, you can marinate the ribs overnight with the dry rub.
  • Experiment with different wood chips for smoking to find your preferred flavor.
