Description

A deliciously tender and flavorful slow-roasted pork belly served with crispy chicken cracklings.


Ingredients

  • 2 pounds pork belly
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 pound chicken skin


Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Rub the pork belly with salt, pepper, garlic, thyme, and paprika.
  3. Place the pork belly fat side up in a roasting pan.
  4. Roast in the oven for 4 hours or until tender.
  5. For the chicken cracklings, lay the chicken skin flat on a baking sheet and bake for the last 30 minutes of the pork cooking time until crispy.
  6. Let the pork rest for 15 minutes before slicing.
