- 2 pounds pork belly
- 1 tablespoon salt
- 1 tablespoon black pepper
- 4 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon paprika
- 1 pound chicken skin
Instructions
- Preheat your oven to 300°F (150°C).
- Rub the pork belly with salt, pepper, garlic, thyme, and paprika.
- Place the pork belly fat side up in a roasting pan.
- Roast in the oven for 4 hours or until tender.
- For the chicken cracklings, lay the chicken skin flat on a baking sheet and bake for the last 30 minutes of the pork cooking time until crispy.
- Let the pork rest for 15 minutes before slicing.
Notes
- For extra flavor, marinate the pork belly overnight.
- Ensure the chicken skin is completely dry for the best cracklings.
