Instructions
- Preheat the oven to 300°F (150°C).
- In a large oven-safe pot, heat olive oil over medium-high heat.
- Season beef cheeks with salt and pepper, then brown them on all sides in the pot.
- Add onions and garlic, cooking until softened.
- Pour in the beef broth and red wine, bringing to a simmer.
- Add rosemary and thyme, then cover the pot and transfer to the oven.
- Roast for 3 to 4 hours, or until the beef is fork-tender.
- Remove from oven, let rest for a few minutes, then serve.
