Description

A slow-cooked leg of goat that is rich in flavor and perfect for special occasions.


Ingredients

  • 1 leg of goat
  • 6 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 cups red wine
  • 2 cups beef broth
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large roasting pan, heat olive oil over medium heat. Sear the leg of goat on all sides until browned.
  3. Add garlic, rosemary, and thyme, then pour red wine and beef broth over the meat.
  4. Cover tightly with foil and place in the oven.
  5. Cook for 7 hours, basting occasionally with the pan juices.
  6. Remove from oven, let rest for 15 minutes before slicing and serving.
