- 1 leg of goat
- 6 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 cups red wine
- 2 cups beef broth
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 300°F (150°C).
- In a large roasting pan, heat olive oil over medium heat. Sear the leg of goat on all sides until browned.
- Add garlic, rosemary, and thyme, then pour red wine and beef broth over the meat.
- Cover tightly with foil and place in the oven.
- Cook for 7 hours, basting occasionally with the pan juices.
- Remove from oven, let rest for 15 minutes before slicing and serving.

- This dish pairs well with roasted vegetables and mashed potatoes.
- For best flavor, marinate the goat overnight before cooking.
