Description

A delicious recipe for seared beef liver enhanced by the rich flavor of bacon lard.


Ingredients

  • 1 pound beef liver
  • 4 ounces bacon, diced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. In a skillet, cook the diced bacon until crispy.
  2. Remove bacon and set aside, leaving the fat in the skillet.
  3. Season the beef liver with salt and pepper.
  4. Add olive oil to the skillet and heat.
  5. Place the liver in the skillet and sear for 3-4 minutes on each side.
  6. Top with crispy bacon and sprinkle with parsley before serving.

Notes

  • Soaking the liver in milk for a few hours can help to mellow the flavor.
  • Serve with sautéed onions or a side salad for a complete meal.
