- 1 pound beef liver
- 4 ounces bacon, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- In a skillet, cook the diced bacon until crispy.
- Remove bacon and set aside, leaving the fat in the skillet.
- Season the beef liver with salt and pepper.
- Add olive oil to the skillet and heat.
- Place the liver in the skillet and sear for 3-4 minutes on each side.
- Top with crispy bacon and sprinkle with parsley before serving.
Notes
- Soaking the liver in milk for a few hours can help to mellow the flavor.
- Serve with sautéed onions or a side salad for a complete meal.
