Ingredients

Scale
  • 4 large eggs
  • 2 tablespoons unsalted butter
  • 1/4 cup sea urchin
  • Salt to taste
  • Freshly ground black pepper to taste
  • Chives for garnish

Instructions

  1. Bring a pot of water to a gentle simmer.
  2. Crack each egg into a separate small bowl and gently slide them into the simmering water.
  3. Cook the eggs for 3-4 minutes until the whites are set and the yolks are still runny.
  4. While the eggs are cooking, melt the butter in a small pan over low heat, then add the sea urchin and stir to combine.
  5. Once the eggs are done, carefully remove them from the water with a slotted spoon and drain.
  6. Place the poached eggs on a plate, drizzle with the sea urchin butter, and season with salt and pepper.
  7. Garnish with chopped chives before serving.
