Description

Ingredients

  • 1 pound scallops
  • 4 tablespoons unsalted butter
  • 5 fresh sage leaves
  • 1/2 cup chicken stock
  • 1/4 cup heavy cream
  • Salt to taste
  • Pepper to taste


Instructions

  1. Heat a skillet over medium heat and add 2 tablespoons of butter.
  2. Once the butter is melted, add the scallops and sear until golden brown on both sides.

  6. Stir in the heavy cream and season with salt and pepper.
  7. Blend the sauce until smooth.
  8. Serve scallops topped with brown butter-sage foam.
