Description

Make delicious and hearty Osso Buco with this savory recipe, perfect for any occasion.


Ingredients

Scale
  • 4 pieces veal shanks
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 cup white wine
  • 1 cup chicken stock
  • 2 bay leaves
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh thyme
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Season veal shanks with salt and pepper, then dust with flour.
  2. Heat olive oil in a large pot over medium-high heat.
  3. Add shanks to the pot and brown on all sides. Remove and set aside.
  4. Add onion, carrots, celery, and garlic to the pot. Sauté until softened.
  5. Deglaze with white wine, scraping the bottom of the pot.
  6. Add chicken stock, bay leaves, rosemary, thyme, and the shanks back to the pot.
  7. Cover and simmer on low heat for 1.5 to 2 hours until meat is tender.
  8. Remove bay leaves before serving.

Notes

  • Serve with gremolata and risotto for an authentic experience.
  • Can be made a day ahead and reheated for better flavor.
