Ingredients

- 4 pieces veal shanks
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 cup white wine
- 1 cup chicken stock
- 2 bay leaves
- 1 teaspoon fresh rosemary
- 1 teaspoon fresh thyme
- Salt, to taste
- Black pepper, to taste
Instructions
- Season veal shanks with salt and pepper, then dust with flour.
- Heat olive oil in a large pot over medium-high heat.
- Add shanks to the pot and brown on all sides. Remove and set aside.
- Add onion, carrots, celery, and garlic to the pot. Sauté until softened.
- Deglaze with white wine, scraping the bottom of the pot.
- Add chicken stock, bay leaves, rosemary, thyme, and the shanks back to the pot.
- Cover and simmer on low heat for 1.5 to 2 hours until meat is tender.
- Remove bay leaves before serving.
Notes
- Serve with gremolata and risotto for an authentic experience.
- Can be made a day ahead and reheated for better flavor.
