Description
A classic Italian dish featuring tender veal shanks simmered with vegetables, white wine, and broth.
Ingredients

- 2 pieces veal shanks
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 carrot, chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 1 cup dry white wine
- 2 cups beef broth
- 1 teaspoon dried thyme
- salt and pepper to taste
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add veal shanks and brown on all sides, then remove from pot.
- Add onions, carrots, celery, and garlic; sauté until soft.
- Deglaze with white wine and reduce by half.
- Add beef broth and thyme, then return the shanks to the pot.
- Cover and simmer for about 2 hours until the meat is tender.
- Season with salt and pepper and garnish with parsley before serving.
Notes
- This dish is best served with risotto or polenta.
- You can use a pressure cooker to reduce cooking time.
