Description

A classic Italian dish featuring tender veal shanks simmered with vegetables, white wine, and broth.


Ingredients

Scale
  • 2 pieces veal shanks
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 2 cloves garlic, minced
  • 1 cup dry white wine
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add veal shanks and brown on all sides, then remove from pot.
  3. Add onions, carrots, celery, and garlic; sauté until soft.
  4. Deglaze with white wine and reduce by half.
  5. Add beef broth and thyme, then return the shanks to the pot.
  6. Cover and simmer for about 2 hours until the meat is tender.
  7. Season with salt and pepper and garnish with parsley before serving.

Notes

  • This dish is best served with risotto or polenta.
  • You can use a pressure cooker to reduce cooking time.
