Ingredients

- 1 medium winter melon
- 1 pound ground chicken
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon vegetable oil
- 2 cups chicken broth
- 1/2 teaspoon white pepper
- 1 stalk green onion, chopped
Instructions
- Peel and cut winter melon into cubes.
- Heat vegetable oil in a large skillet over medium heat.
- Add garlic and ginger, sauté until fragrant.
- Add ground chicken and cook until browned.
- Stir in soy sauce, sesame oil, and white pepper.
- Add winter melon and chicken broth, bring to a boil.
- Reduce heat, cover, and simmer until melon is tender.
- Garnish with green onion before serving.
Notes
- Great served over rice or noodles.
- Can substitute ground turkey if desired.
- Adjust seasoning to taste.
