Description
A hearty Greek dish featuring tender beef simmered with orzo pasta in a rich tomato sauce.

- 1 pound beef stew meat
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can (14.5 ounces) diced tomatoes
- 2 cups beef broth
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup orzo pasta
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
- Add onions and garlic; sauté until soft.
- Stir in tomatoes, beef broth, oregano, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender.
- Stir in orzo pasta and cook for an additional 10-12 minutes until pasta is tender.
- Remove from heat, stir in Parmesan cheese and parsley before serving.
Notes
- For added flavor, you can use red wine in place of some of the beef broth.
- Serve with crusty bread or a fresh salad.
