Description

A hearty Greek dish featuring tender beef simmered with orzo pasta in a rich tomato sauce.


Ingredients

  • 1 pound beef stew meat
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup orzo pasta
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  2. Add onions and garlic; sauté until soft.
  3. Stir in tomatoes, beef broth, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender.
  5. Stir in orzo pasta and cook for an additional 10-12 minutes until pasta is tender.
  6. Remove from heat, stir in Parmesan cheese and parsley before serving.

Notes

  • For added flavor, you can use red wine in place of some of the beef broth.
  • Serve with crusty bread or a fresh salad.
