Description

A unique method to create flavorful salt-cured egg yolks that can be grated over various dishes like parmesan.


Ingredients

  • 4 egg yolks
  • 1 cup coarse sea salt
  • 1 cup sugar


Instructions

  1. In a bowl, mix the salt and sugar together.
  2. In a shallow dish, spread half of the salt mixture.
  3. Place the egg yolks on top and cover them with the remaining salt mixture.
  4. Cover the dish and refrigerate for 4-5 days.
  5. After curing, remove the yolks, rinse them gently, and pat dry.
  6. Let the yolks air dry for a few days until they are firm.
  7. Grate over your favorite dishes as a finishing touch.
